this is my attempt at a desayuno tipico de guatemala, typical guatemalan breakfast, only it should have scrambled eggs and some goat cheese type thing with it too, also maybe some avocado…. anyways after going to guatemala with my dad this past july and loving the country, people, and definitely the food, i had been meaning to try to cook a guatemalan meal myself!
so i fried up some plantains (soooo delicious) in vegetable oil and re-fried beans as best i could. in guatemala they serve their beans almost like a hummus texture, very thick, and also very salty. they also serve this cream sauce thing with breakfast, but i just used some plain yogurt with some salt, pepper and chili added. its delicious with the plantains- they were a little dry so it was nice to have a sauce with them.
then piping hot corn tortillas are served on the side to wrap it all up, yum!
